Volatile acidity is a key parameter in wine conservation. high volatile acidity indicates spilages and incorrect storage of the wine. It is also an important parameter for vinegars.
Level of volatile acidity is limited depending of appelations.
For sample stability issues, only send samples with alcoolic fermentation completely done.
